Tuna Salad w/ Apples



Ingredients:
  • 1 packet of Tuna in water (no liquid)
  • 1 small apple, cored and finely diced
  • 1 small shallot, minced
  • 1/3 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • salt & pepper to taste
  • Juice of ½ a lemon (optional)
  • French bread (to serve)
  • 1 tablespoon finely chopped parsley (garnish, optional)
Directions
  1. Combine all ingredients together with a fork.
--To serve, spoon onto a lightly toasted french bread and sprinkle with torn parsley.

10.29.2016 - made this for myself for lunches all week.  used a soft french bread roll sliced legthwise to serve.  I did not use lemon juice in this one because I didn't have it on hand, but i didn't miss it.  I did add cracked pepper to it. definite keeper.

Breakfast Irish Apple Cake

Ingredients
  • 3 C. Flour
  • 2 t. Baking Powder
  • ⅛ t. Salt
  • ¼ t. ground Cloves
  • ¼ t. ground Nutmeg
  • 6 oz. cold butter
  • ¾ C. Sugar + 2T Sugar
  • 4 large Golden Delicious or Granny Smith Apples
  • 2 Eggs
  • ¾ C. Milk
Directions:
  1. Preheat the oven to 375 degrees.Grease and flour an 8" round spring-form pan.
  2. Sift the flour, baking powder, salt, cloves and nutmeg into a  mixing bowl large enough to allow room for the apples to be folded in later.
  3. Cut the butter into the flour with pastry cutter until the mixture resembles fine crumbs.
  4. Add the ¾ C. sugar to the flour mixture and mix in.
  5. Peel the apples and slice them into uniform pieces. This cake works best and gets that 'chunky apple look' if the slices are about ¼" wide and then cut into 3 pieces.
  6. Toss the apples into the flour mixture and combine them thoroughly.
  7. In a separate bowl, beat the eggs and milk together. Add to the dry bowl and mix in with a large spatula until just combined. Batter will be thick.
  8. Transfer the dough into the prepared cake pan and flatten the top surface using the back of your spatula.
  9. Sprinkle the sugar over the top of the cake.
  10. Bake for 45-50 minutes. Test the center for doneness. The top of the cake should be golden brown.

10.29.2016 - I made this at our new apartment, and shared it with my mom.  This was very simple, with a lovely cakey-flavor similar to mom's "cherry puddin" and I ate it as a breakfast cake.  The apples maintained a good bite to them and did not turn to mush, so that was very nice!  The original recipe also has a recipe for custard to go with this but I did not make that.
